Advanced glycation end-product

It'd be interesting to search for or design a protein that could break AGEs, specially Glucosepane.

Yeah, I can't deny that I'd be far more motivated to crunch for this project if the top priority was designing regenerative/rejuvenation interventions for ageing-"specific" proteins.

Definitely. There are many potential AGEs "inhibitors" as in, reduce or eliminate their formation, but there has yet to be discovered a molecule that effectively BREAKS them so their elimination is expedited (except for Alagebrium).

AGEs apparently are responsible for many degenerative diseases.
AGEs and ROS are as far as I'm concerned the main accumulating damaging factors that contribute to aging.

Let's not forget the recently discovered senolytics, which so far are Quercetin and Dasatinib. Both of these exhibit a direct action on senescent cells (kills them). Imagine designing a protein/molecule that could do this more effectively.
