Is there an easy way to stop this? I just added a Mac Mini to my crunching squad, and it immediately requested 100 WUs from Rosetta. I have it on "no new tasks," but as soon as I go to get more I think this will happen again.

Once BOINC gets a reasonable estimated runtime on the tasks, it won't happen again. Not sure why you believe it will, nor why it would have the first time. I take it that it was NOT the first request that got all of that extra work.

Suggest you review your runtime preference, and preferences for how often to connect and how much extra work to download.

Yeah, yesterday was when I attached the computer to my account. It requested close to 100 tasks (which, of course, it would never be able to complete before the deadline). Rosetta told the computer it had exceeded its task limit, and so I assumed it wouldn't happen again today (but lo and behold, it did).

I'll check the prefs.

I've heard there are some serious issues with the most current BOINC release and the work fetch guidelines. Perhaps this is one of the ways these issues play out.

That is why I use the Work, Home, School and default settings in the Your Account, Computer Preferences section. I set the default settings low and then after the machine is running fine I move it to one of the other sections. I even have the default set to only use 1 cpu.
