Will the package update from 5.10.45 to the newer 6.2.15 version for amd64 installations at some point? Is this something that BOINC needs to fix, or Ubuntu?

Being able to see what is going on is what just drove me back to join distributed computing again. It makes you feel like you are involved with the project and actively doing something, that among other things provides something back to the user. It would be good to hear someone is actively working on this.
