A friend who has been crunching Rosetta for long time told me that he saw WUs using up to 1GB RAM.
What I have noticed regarding my own crunching, the most RAM usage per WU is about 270MB.
My settings (on the Rosetta page as well as with the BOINC app) allow use of 80% of my 8 GB RAM; there are almost no other things running that would use up much RAM, mostly there is free RAM of about 5-6 GB.
Hence my question: what can I do in order to dedicate more RAM to Rosetta crunching?

I think it sounds more like you are asking why your machine is using less RAM than your friend's. The amount of RAM required by a task varies, greatly, depending on the type of task. Somewhere in the 250-350MB range is more typical. I believe your friend was trying to describe worst-case to help assure you don't have unexpected surprises.
